Mexican Hot Chocolate Cupcakes

IMG_7125What was supposed to be a 3-day weekend was extended another day, and I think we were all secretly thankful for this prolonged vacation.  My co-teachers and I just got over the first term crunch and got our much needed break (maybe even too much of it).

Last night, Mr. and Mrs. PM decided to host a Mexican dinner in lieu of a Halloween party.  I honestly thought that was a better idea since I’ve never been a fan of this festival.  Yes, I am the Halloween scrooge 😛 Mrs. PM was set to cook all the food so I volunteered to bring dessert – Mexican hot chocolate cupcakes. Basically, the cupcake version of hot chocolate with a dash of cayenne. I was very excited to make these.

After reading different variations of this recipe, I finally decided on my own. I was going to take my chocolate cupcake recipe and just add 1/8 teaspoon of cayenne and chai spices to it. I also substituted the regular cow’s milk with coconut milk which was quite typical for this recipe. I was very curious to see if the coconut milk would affect the taste of the cupcake, but it didn’t. To top it all of, I made orange chocolate buttercream frosting. Mmmmmmm. This cupcake recipe is perfect for a cold night because of the hint of heat and all the spices that warm you up inside. This is definitely not your regular chocolate cupcake and my absolute new favorite.

I’d share my recipe with you but then I’d have to hunt you down after. But check this one out, a recipe from Love and Olive Oil which is very similar to the one I used.

Green Tea Cupcakes with a Surprise Frosting

I’ve forgotten how therapeutic baking can be. Lately I’ve only been baking to fulfill orders, which can be quite stressful for the obvious reasons. Baking for yourself or for loved-ones is a totally different story.

Today, instead of working on my laptop and checking papers, I decided to take the load off by spending some quality time in the kitchen. I have a date with my college girlfriends tonight so I decided to make a dozen green tea cupcakes for them.  Making those didn’t take very long and I was still in the baking mood so I considered making a recipe I’ve ignored for quite a while.

Remember that pound cake I made before? Well, for some reason, I could never make it again. All my succeeding attempts were all failures and I just chose to resentfully  keep this recipe until I felt brave enough to try it again. I guess all I really needed was the confidence because it turned out just like the first one. Who knew ovens could smell fear?

Although today was really supposed to be spent working, I’m glad I took the time off to do something I really enjoy. I’ve been feeling so overworked lately that all I do when I’m done is sleep (oh, and maybe have a beer or two).  After today, and what I can imagine to be a good night with the girls, I should be ready to take on more work. The next week will be quite hellish and I think it was really important for me to regroup. So here’s to a week full of deadlines and hopefully a disposition that will help me breeze through it.

100 Cupcakes

Last night as I prepared to go to bed, I turned on the air conditioner and prayed for a good night’s sleep because the following day was sure to be exhausting. I was to bake 100 assorted cupcakes that were ordered by my friends. I was actually quite excited and psyched since being busy only means good business.  But today, I realized that if I really want this cupcake empire to flourish, I’m going to have to prepare myself for even harder days.  I wanted to burst into tears several times during the day but I just kept telling myself to suck it up…. ( sneaking in a few minutes to play with my cat also helped).

You know how I used to wonder why I wasn’t one of those cooks who didn’t consume what they made? Well today, I was finally one of them.  Inasmuch as I love cupcakes, after baking nearly nine dozen of these…I could barely look at them. My sister calls it baker’s fatigue. That sounds about right.

After icing my last cupcake, I gave myself a pat on the back in the form of a beer. Ahhhhhhh. And this is only the beginning. Good luck to all of us. Now to deliver these babies. Let’s hope for good weather tomorrow.
